it’s the new winter menu …set to music!

Had a blast last Thursday night on the line with the guys photographing the new winter menu and the backstory of how that lovely food arrives on your plate. It was a fun and  bustling evening. Doug was stationed at the pass, expediting–checking every plate on its way from chef, to server, to guest-greeting almost everyone in the dining room, and choreographing the whole complex ballet that is service. Cameron ran the line and the tandoor. James was on pyrotechnics down at the sauté station. Elliott  prepared and plated our gorgeous new salads (very quickly). Nate worked the  pizza oven. Louie plated deserts in back and helped Elliott on the line when things got really crazy. Dave prepped for the rest of the week in back and Aaron tested some wild new dessert ideas. WOW- and this is just what the culinary team was doing! I, your humble blogger, was simply getting in everyone’s way (especially Elliott’s-sorry) documenting the excitement.
